A full box



A full CSA box is a lot of produce. I supplemented the basil with some from our yard to make a pistachio pesto for dinner tonight. The farm sent out a recipe for the tomatillos and tomatoes. I need to make more zucchini bread. Hopefully the corn will make it to this weekend. The rest... will get used... somehow. I wonder if my mom will want the squash. At least, I think that's what the yellow things are.

Hey MacD,
just a little advice on corn--the sugars start the process of converting to starch as soon as it is harvested, so maybe next time you get a CSA lot of corn, you might want to at least blanch the ears (or kernals) so you can preserve the sugary goodness. ;o)

When we grow our own corn, i set the water to boil before we go out to harvest--then we shuck like fools and get 'em boiling as quick as pie.

It's great getting all that, but i understand what you mean by being overwhelmed by it. Our CSA was beet crazy--and we don't like beets. :o) Every week, there'd be 2-3 pounds of beets. Your's seemed like they run their boxes better--lots of stuff, but atleast there's variety.
